Love Your Christmas Leftovers

With Christmas just around the corner, now is the time to start planning your Christmas feast.

For most of us Christmas as a time to indulge, particularly when it comes to the shopping list. Chocolates, nuts, cheeses, Christmas pies and puddings, drinks, cream, cherries, strawberries and more find their way into the shopping trolley and a small-fortune is spent on a Christmas turkey or ham. If you plan your meals well, you might find that your Christmas dinner will keep you going through Boxing Day and beyond, taking the sting out of the enormous size of that shopping bill.

Firstly, make sure you have enough room in your fridge or freezer to store those leftovers, or if you have more than you need invite your guests to take some home too.   Also, stock up on pantry staples when they are on special so you have ingredients on hand to transform your leftovers into new meals.  Here’s a couple of gourmet leftover ideas:

5 things you can do with leftover Christmas ham

-          Make cranberry kebabs! Cut your ham into chunks and thread them onto skewers with vegetables. Use the rest of your cranberry sauce to glaze the kebabs before cooking them on the BBQ or in a pan.

-          Have a Hawaiian burger. Cut thick slices of ham, fry them and eat them in the burger with a slice of pineapple and some salad.

-          Continuing the Hawaiian theme, use your chopped ham as a pizza topping.

-          Use ham as a replacement for bacon in pasta dishes, quiches or bacon and egg pies.

-          Freeze your ham bone for use in winter. When the weather turns cold, chuck your ham bone in a pot and make a batch of pea and ham soup.

TIP: If you have got to the point that you can’t stand the sight of ham, freeze it for later. Cut into slices, wrap tightly in plastic and then seal in a snaplock bag.

 

CHRISTMAS PUDDING ICE CREAM

Serves 4

Ingredients:

125g leftover Christmas pudding, crumbled
150ml chilled ready-made custard
150ml cream, whipped
Shot of liquor such as brandy, rum, whisky or Baileys (optional)

Method:

  1. Mix together the custard and whipped cream then stir in the crumbled Christmas pudding. Add the liquor if using.
  2. Freeze in a large Tupperware container and stir every half hour or so until it's the consistency you want. If you have used liquor the ice cream will be softer than usual.

Tip: You can add all sorts of things to the ice cream. Try leftover fruit mince pies, crushed candy canes or chocolate.
